Lovely Pinterest Wednesday!

This week I am all about food & home decor!  I have just been dying to try some new recipes and have been so excited for the fall recipe I’m seeing.  I am quite the pumpkin-addict!

First stop – quick easy breakfast.  Cook eggs with spinach and any other goodies you’d like in a muffin tin and then store them in the fridge.  Pop them in the microwave and toast your english muffin and there you go! Breakfast for on your way to work!

 

 

This recipe I am just dying to make! Chicken Tamale Pie! Shredded chicken, enchilada sauce, cornbread and so much more.  A friend at work made it and her and the hubs loved it! I’m waiting for it to get a little colder before I whip this delicious recipe out!  Not to mention the picture just captures the yumminess of the dish!

Fall is my favorite time – especially when it comes to all the recipes that come out. I am just madly in love with all things eggnog, pumpkin, spice anything!

Homemade Pumpkin Frappe – yes please! This is like heaven in a jar and I will be making this on Saturday!

 

I am so excited to try to make this love decor sign. I’m thinking I want it for our bedroom. When I saw it on Pinterest I just knew I had to make it!

Love: Weddings, Friends and Food!

I’d have to agree with Amy, over at A Glimpse of the Gouglers, that this summer there is just sooo much to love!

I’m loving the awesome foundation group we’re in.  The couples are fantastic.  Below is a picture from our Christmas party from last year.  Love, love, love each couple in our group.  Not to mention our leader couple is amazing.  God is so good to us to bless us with such a great group!

I’m loving our new home.  We are slowly but surely decorating, and I’ve even purchased a few tester samples of paint, so that will be our project next weekend to officially decide on paint colors!

Excited about testing this bold color on an accent wall. 🙂

I’m loving all the recipes I’m trying right now.  Like the Sangria recipe I shared in yesterday’s post!

I’m loving menu planning.  This recipe is on the list for next week. 🙂 Broccoli salade – delish!

Oh, and of course…I’m loving wedding season.  See below for a great action shot of the dance floor.  No shame!

And last, but most importantly…I’m loving this verse from the Lord’s word!  Thank you God for your encouraging Word as I struggle through my walk.

Isaiah 40:30-31 Even youths shall faint and be weary, and young men shall fall exhausted; but they who wait for the LORD shall renew their strength; they shall mount up with wings like eagles; they shall run and not be weary; they shall walk and not faint.

Cauliflower Crust Pizza!

Last night the hubs and I took the opportunity to explore a new recipe that my sweet friend Laura K recommended after she knew how much I loved cauliflower.  Thanks for the recipe, Lauren.  This is now a staple in our household!

Step One: Rice a head of cauliflower in a food processor. Mix in 1/4 cup of water. Then cook in the microwave for 6-8 minutes.  *Disclaimer – make sure not to use too much water.  You may think it’s too dry, but don’t overwater it otherwise your crust will turn out mushy!

Step Two: Then mix in a medium size bowl with mozzarella and 1 egg.  After you mix well, form a 9″ circle on a greased pizza pan.  Bake the crust in the oven at 450* for 15 minutes or until the center is well cooked!

Step 3: Now it’s time for toppings!  I picked some fresh basil from our new basil plant in the backyard.  I love having basil under all the other toppings.  It adds wonderful flavor to the sauce and just tastes delish!

Don’t forget about the cheese.  The hubs favorite trick: add cheese, then toppings and then MORE cheese.  This helps everything stay in place while you are eating.  Great tip!  My favorite toppings of the night: pepperoni, bell peppers, basil and cheese!

Step 4: Now it’s time to pop this bad boy in the oven.  Turn on the broiler and cook it on high for 3-4 minutes.  NOTE: when broiling…make sure to keep a close eye on your pizza so you don’t burn the top!

If you try it let me know what you think.  I paired it with a delicious salade of wild greens, dried cranberries, pepitas, croutons, tomatoes, extra bell peppers, mushroom and topped with an Asian sesame dressing.

Well, tonight is a night of celebration.  I’m getting together with my old graduate class cohort for Indian food.  We figured it’s an essential since we all lived in India together for 6 weeks!
